This homey single-pot Greek chicken and lemony rice brings together juicy meat and tasty grains for a flavor-packed Mediterranean meal. The blend of herbs, tangy cheese, and fresh veggies creates a filling dinner that feels straight from a family-run Greek kitchen.

Just like grandma's best cooking, this meal fills your home with smells that'll have everyone asking when dinner's ready. The clean pot at the end of the night tells you everything you need to know about how good it is.

Must-Have Components

  • Chicken thighs: Go for ones that are about the same size, nicely trimmed and with some fat running through for extra juiciness
  • Jasmine rice: Pick rice that looks even and smells nice - it'll cook up soft and fluffy
  • Fresh lemons: Find ones that feel heavy and have bright, thin skin that smells amazing
  • Grape tomatoes: Get plump, bright ones that aren't too soft
  • Baby spinach: Make sure it's bright green and perky, not wilted
  • Chickpeas: Give them a good wash before using to get the best flavor
  • Greek feta: Real sheep's milk feta adds that can't-miss Greek taste

You can't skip the fresh lemon - its zingy kick makes everything taste better and cuts through the richness of the dish.

I've made this dish countless times and can tell you waiting really does make it better. That rest time lets everything come together perfectly.

Perfect Pairings

Put it next to a simple Greek salad and some warm pita bread with herbs. A spoonful of homemade tzatziki adds a cool, creamy touch.

Possible Changes

Try big mushrooms instead of chicken for a veggie version or go with seafood for a beachy twist. Brown rice works too and adds extra nutrients.

Keeping Leftovers

Keep in the fridge in tight containers for up to three days. It tastes even better the next day. When warming up, add a splash of water to keep it moist.

Serving Ideas

Dump it all in a big bowl, sprinkle with fresh herbs and lemon. The colors look great together. Bring extra cheese and herbs to the table.

Health Perks

This dish shows why Mediterranean food is so good for you, mixing lean meat, good grains, veggies and healthy fats all in one spot.

→ Feta Mixture

16 1/4 teaspoon dried oregano
17 1 tablespoon lemon juice
18 6 ounces of feta cheese, chopped into small cubes
19 2 tablespoons fresh oregano, minced (optional)
20 A small amount of oregano, fresh, for garnish
21 1 tablespoon extra virgin olive oil

Instructions

Step 01

Take your chicken pieces and rub them all over with oregano, salt, paprika, and chili flakes.

Step 02

Heat up a skillet on medium. Toss in olive oil and lay the chicken down. Cook for around 5 minutes on each side until it's fully done (you want it to hit 165°F). Put the cooked chicken aside.

Step 03

In the same pan, sauté minced garlic, oregano, and half the cherry tomatoes for 2 minutes. Add chopped spinach and stir until it wilts completely.

Step 04

Combine the warm jasmine rice with lemon juice, chickpeas, and the rest of the sliced tomatoes. Mix and heat until everything comes together.

Step 05

Toss the feta chunks in a bowl with olive oil, dried oregano, and lemon juice. Mix so everything’s evenly coated.

Step 06

Gently stir some of the feta into the rice. Lay the cooked chicken on top in the skillet, sprinkle the rest of the feta and fresh oregano. Adjust the seasoning if needed.

Notes

  1. Skip feta if you want a dairy-free version.
  2. Keep your heat to medium when cooking chicken to avoid burning the oil.
  3. Hold onto the chicken drippings; they add amazing flavor to the rice mixture.
