Spicy Cheesy Peppers (Print Version)

01 - ½ cup ranch dressing
02 - 4 cups shredded cooked chicken (from one rotisserie chicken)
03 - 3 bell peppers
04 - 2 tablespoons olive oil
05 - 1 teaspoon onion powder
06 - ½ cup buffalo sauce
07 - ½ cup shredded mozzarella cheese
08 - 1 teaspoon garlic powder
09 - ½ teaspoon salt
10 - ¼ teaspoon black pepper

11 - Blue cheese crumbles (optional)
12 - Thinly sliced green onions

# Instructions:

01 - Turn your oven on to 350°F (or 180°C) to preheat.
02 - Slice the peppers down the middle and scoop out everything inside, like seeds and membranes.
03 - Lay the peppers cut side up in your baking dish or sheet, coat them with olive oil, and sprinkle with some salt and pepper. Bake for about 10 minutes, stopping before they're fully soft.
04 - While the peppers are in the oven, mix the chicken, buffalo sauce, ranch dressing, mozzarella cheese, garlic powder, and onion powder in a big bowl. Stir it all together.
05 - Take the peppers out of the oven and carefully pack them with the filling mix. Bake again for 5 minutes and then broil for 1-2 minutes to get the tops golden and bubbly.
06 - Pull the peppers out and sprinkle with green onions, more ranch dressing or blue cheese crumbles if you'd like.

# Notes:

01 - Adding rice can lighten the filling by replacing some chicken.
02 - Swap ranch for blue cheese dressing if you prefer a tangy taste.
03 - Cooked chicken of any variety will work here.
04 - Leftovers keep well in the fridge for up to four days in a sealed container.
