Heat your oven to 350°F (175°C). Line a tray with parchment to keep the crackers from sticking.

Grab a grater and shred that cheddar—freshly grated cheese melts best for this.

In a big bowl, throw in the flour, salt, cayenne, paprika, and baking powder. Stir it up until it’s all blended.

Toss in the shredded cheese and butter chunks. Mash it all together using your hands or a fork until it starts to look crumbly.

Slowly add a bit of water (about a tablespoon at a time) and mix. Stop when it sticks together but isn’t wet.

Sprinkle some flour on your counter. Roll the dough out to about a quarter of an inch thick—or thinner if you like crispy crackers.

Use a knife or a cookie cutter to cut the dough into little pieces. Don’t let them overlap on the tray.

Pop the tray in your oven and bake for 20-25 minutes, or until they’re crunchy and golden.

Leave the crackers on the tray to cool for a few minutes. Move them to a rack once they’re easy to handle.
