Stir sausage, cheddar, breadcrumbs, one egg, and thyme together in a mixing bowl until it's evenly combined.

Beat the extra egg with a splash of water to make a quick egg wash.

Roll out the puff pastry and slice into four strips by halving each sheet lengthwise.

Shape sausage mixture into four long pieces, lay on the strips. Spread mustard on one side, brush the other side with egg wash, then roll them up and seal well.
