Grab a rolling pin and press each bread slice until it’s nice and thin—easy to roll up.

Take a sausage link and place it close to the edge of one flattened bread slice. Roll it snugly, then do the same with the rest.

Whisk eggs, milk, vanilla, and cinnamon in a shallow dish until smooth and blended.

Heat butter in a skillet over medium. Dunk each roll-up in the egg mix to coat all over, then put it seam-side down in the pan. Cook about 2–3 minutes per side, turning till golden brown all around.

Combine sugar with cinnamon in a small bowl. Roll the freshly cooked roll-ups in this mix so they’re well covered.
