Turn your oven on to 200°C (390°F). Dice up clean potatoes and toss them into a casserole dish.

Pour 1 tablespoon of olive oil over the potatoes. Add a mix of oregano, thyme, salt, and black pepper on top. Stir it all together so the potatoes are well-coated.

Place the feta block right in the middle of the dish. Push one side of it onto the potatoes' seasoning for a flavor boost, then turn it over. Pop the garlic bulb and half the lemon pieces into the dish, and drizzle everything with the leftover olive oil.

Put the dish into the oven for 45-55 minutes. Keep an eye on the garlic, pulling it out about 35 minutes in if it starts to get too dark. Let the potatoes turn crispy and golden.

When the garlic is cool enough to handle, squeeze out the soft inside. Mash it up into a paste, mix it into the dish with basil and juice from the extra lemon quarters, and combine everything gently.

Drizzle honey all over it, and sprinkle some extra fresh basil on top for a colorful and tasty finish.
