Baked Feta Potatoes (Print Version)

# Ingredients:

01 - 1-2 big baking potatoes, scrubbed clean and diced
02 - 200 g feta cheese block
03 - 2 tablespoons olive oil, split up
04 - 1 teaspoon dried oregano
05 - 1 teaspoon dried thyme
06 - 1 teaspoon black pepper
07 - 1 teaspoon salt
08 - 1 bulb of garlic, top trimmed off
09 - 1 lemon, cut into four pieces
10 - 1 tablespoon of honey
11 - 20 g fresh basil, finely chopped

# Instructions:

01 - Turn your oven on to 200°C (390°F). Dice up clean potatoes and toss them into a casserole dish.
02 - Pour 1 tablespoon of olive oil over the potatoes. Add a mix of oregano, thyme, salt, and black pepper on top. Stir it all together so the potatoes are well-coated.
03 - Place the feta block right in the middle of the dish. Push one side of it onto the potatoes' seasoning for a flavor boost, then turn it over. Pop the garlic bulb and half the lemon pieces into the dish, and drizzle everything with the leftover olive oil.
04 - Put the dish into the oven for 45-55 minutes. Keep an eye on the garlic, pulling it out about 35 minutes in if it starts to get too dark. Let the potatoes turn crispy and golden.
05 - When the garlic is cool enough to handle, squeeze out the soft inside. Mash it up into a paste, mix it into the dish with basil and juice from the extra lemon quarters, and combine everything gently.
06 - Drizzle honey all over it, and sprinkle some extra fresh basil on top for a colorful and tasty finish.
