Roasted Garlic Butter (Print Version)

# Ingredients:

→ Roasted Garlic

01 - 2 whole garlic bulbs (each with roughly 10-12 cloves)
02 - 1 tsp of olive oil (extra virgin)

→ Butter

03 - 113 g (½ cup or 1 stick) of unsalted butter, softened
04 - 1 tbsp Dijon mustard with coarse texture
05 - 1 tbsp chopped chives
06 - 1 tbsp parsley leaves, freshly chopped
07 - 2 tsp of fresh thyme leaves
08 - 1 tsp squeezed lemon juice
09 - ½ tsp ground paprika
10 - ¼ tsp kosher salt
11 - ⅛ tsp of ground black pepper
12 - ⅛ tsp cayenne pepper powder
13 - ⅛ tsp red pepper flakes, crushed

# Instructions:

01 - Set your oven to 400°F to preheat. Peel off the loose papery skin on the garlic bulbs, but keep the cloves together. Slice off about ¼ inch from the top to expose them. Place the garlic bulbs in the center of a foil square (roughly 10 inches). Pour olive oil all over the cloves until they're coated. Wrap each foil square tight like a packet. Let it roast for 50-60 minutes until the cloves inside are soft and golden. Pull them out of the oven, open the packets with care, and cool down completely. When they're cool, squeeze the softened garlic into a bowl while throwing out the peels.
02 - In the bowl with the roasted garlic, toss in the softened butter, Dijon mustard, chives, parsley, thyme, lemon juice, paprika, salt, black pepper, cayenne, and red pepper flakes. Stir it all together until smooth and creamy, making a little over ⅔ cup of buttery goodness.
03 - Spread some plastic wrap out flat and place the butter mixture on top. Roll it into a log, shaping and smoothing as you go. Completely cover the butter with the wrap, twist the ends tightly, and pop it into the fridge until it firms up. This takes at least 2 hours or it can sit overnight.
04 - Melt your cowboy butter in the microwave. Heat it in 20-second bursts, giving it a stir in between, until it’s fully melted. Use it as a dip and enjoy!
05 - Keep the cowboy butter in an airtight container in the fridge for a maximum of 5 days.
