Quick Easy Fish Stew (Print Version)

# Ingredients:

01 - 1 teaspoon salt.
02 - Pinch of dried thyme.
03 - 8 ounces of clam juice.
04 - 1/2 cup white wine, dry.
05 - 3 garlic cloves, finely minced.
06 - 6 tablespoons good-quality olive oil.
07 - 1 medium onion, diced.
08 - 1 1/2 cups chopped fresh tomatoes or 14 ounces from a can.
09 - Pinch of dried oregano.
10 - 2 teaspoons optional tomato paste.
11 - 1/8 teaspoon hot sauce (like Tabasco).
12 - 1/8 teaspoon ground black pepper.
13 - 2/3 cup chopped fresh parsley.
14 - 1 1/2 pounds firm white fish fillets, cut into 2-inch chunks.

# Instructions:

01 - Carefully drop in the fish and simmer for 3–5 minutes till it flakes when tested.
02 - Heat oil, toss in onions for 4 minutes, stir in garlic for 1 minute, then toss in parsley and sauté for another 2.
03 - Sprinkle in thyme, oregano, pepper, salt, and a few dashes of hot sauce. Adjust flavor as you like.
04 - Add tomatoes and paste, cook for around 10 minutes.
05 - Pour in the wine and clam juice, stir, and let it simmer evenly.

# Notes:

01 - Feel free to toss in some shellfish for variety.
02 - Swap out clam juice for shellfish stock if you’ve got it.
03 - Pairs great with crusty bread.
