Mini Jar Cheesecakes (Print Version)

# Ingredients:

→ Crust

01 - 1/3 cup melted butter
02 - 1 1/2 cups crushed graham crackers (1 sleeve)

→ Cheesecake Filling

03 - 4 eggs (large)
04 - 24 oz cream cheese, softened
05 - 2 tsp vanilla extract
06 - 1/4 tsp lemon extract
07 - 14 oz sweetened condensed milk

→ Strawberry Sauce

08 - 1/2 cup sugar (granulated)
09 - 3 tbsp cornstarch
10 - 16 oz fresh strawberries
11 - 1 tbsp lemon juice
12 - 1/2 cup water

# Instructions:

01 - Blend melted butter with the crumb mixture. Press a spoonful into each jar to create the base.
02 - Whip the cream cheese until fluffy, then stir in the condensed milk. Mix in eggs and extracts slowly until smooth.
03 - Pour filling into jars, leaving a little space at the top. Bake at 300°F for 20-25 minutes, keeping an eye on when they set.
04 - Heat the sauce mix in a pot. Let it simmer while you mash the berries to your preferred texture.
05 - Once the cheesecakes cool off, chill them in the fridge for at least 60 minutes. Top them off with your strawberry sauce before enjoying.
