Magic Chocolate Sauce Cake (Print Version)

# Ingredients:

→ Topping

01 - 1 1/4 cups (315ml) boiling water
02 - 1/4 cup (30g) unsweetened cocoa powder
03 - 1 cup (175g) loosely packed brown sugar

→ Batter

04 - 50g / 4 1/2 tbsp melted butter
05 - 2 1/2 tsp baking powder
06 - Pinch of salt
07 - 1/4 cup (30g) unsweetened cocoa powder
08 - 1 egg
09 - 1 tsp vanilla extract
10 - 1/3 cup (70g) superfine or caster sugar
11 - 1/2 cup (125ml) milk
12 - 1 cup (150g) all-purpose or plain flour

# Instructions:

01 - Set your oven to 170C/335F for standard ovens or 150C/305F for fan ovens. Grab a baking dish (5-6 cup size) and butter it lightly.
02 - In a bowl, stir the cocoa and brown sugar, then set it aside for later.
03 - Combine the flour, cocoa powder, salt, caster sugar, and baking powder in a bowl. Stir everything together well.
04 - In another jug or bowl, stir the melted butter and milk. Then mix in the vanilla and egg.
05 - Pour the egg and milk mix into the dry mixture. Stir until the batter is thick and smooth. Spread it into the buttered dish.
06 - Sprinkle the cocoa and sugar mix evenly on top of the batter. Gently shake the dish to spread it out.
07 - Pour the boiling water over a dessert spoon and let it spread gently over the pudding. This ensures an even top.
08 - Pop the dish in the oven and bake for 30 minutes. The top should feel slightly springy like brownie crust when it's done.
09 - Take it out of the oven and let it sit for just a couple of minutes. Serve while warm so the sauce is perfect.

# Notes:

01 - This old-school dessert magically turns one batter into a gooey chocolate topping and fluffy chocolate cake.
02 - The sauce should be syrupy and smooth, like maple syrup, never thick or runny.
03 - You can't let it sit too long, or the sauce gets absorbed into the cake. Eat it fresh!
04 - Reheat leftovers in the microwave to bring back the sauce, though it won't be as saucy as when it's freshly made.
05 - Pair it with strawberries, a scoop of ice cream, some whipped cream, or a dusting of powdered sugar to make it extra special.
