Homemade Peppermint Patties (Print Version)

# Ingredients:

01 - 855 grams (7 ½ cups) of powdered sugar, sifted.
02 - ⅓ cup of light corn syrup.
03 - ⅓ cup of evaporated milk.
04 - A little over 3 tablespoons of softened (or melted) coconut oil, either refined or extra-virgin.
05 - Around ¼ teaspoon of food-safe peppermint essential oil or 1 teaspoon of peppermint extract.
06 - 1 ½ pounds (680 grams) of bittersweet or semisweet baking chocolate, chopped into pieces.
07 - Optional: crushed peppermint candy pieces for decoration.

# Instructions:

01 - Using a large bowl and a mixer on a low setting, blend the sifted powdered sugar, milk, corn syrup, melted coconut oil, and peppermint until it all comes together nicely.
02 - Form the mix into two flat disks and wrap them in plastic. Toss them in the fridge for about half an hour to let them firm up.
03 - Dust a clean countertop or sheet of parchment paper generously with powdered sugar. Take out one chilled disk, unwrap it, and sprinkle more powdered sugar on top.
04 - Roll the dough down to roughly 1/4-inch thickness. Use a round cutter, about 1 7/8 inches wide, or something similar to carve out the rounds.
05 - Take whatever's leftover, gather it up, roll it out again, and cut as much as you can. Do the same thing for the second disk of dough.
06 - Arrange the cut rounds on baking trays lined with parchment paper. Freeze them for about 30 minutes, or even leave them overnight if that’s easier.
07 - Melt the chopped chocolate in a microwave-safe bowl. Use 50% power, and stir every minute until it’s smooth and no big pieces remain.
08 - Grab a fork to dip each frozen piece into the melted chocolate. Tap the fork lightly on the edge of the bowl to shake off the extra chocolate, scrape the bottom of the fork against the bowl, and gently slide the patty onto a parchment paper-lined tray.
09 - If you like, sprinkle some crushed peppermint candy over the top while the chocolate is still soft.
10 - Let the chocolate harden entirely at room temperature. It’ll take around an hour. Once they’re set, pop the patties into the fridge until you’re ready to eat them.

# Notes:

01 - If you find the peppermint flavor isn’t strong enough, feel free to adjust by adding a bit more extract or peppermint oil. Taste the filling before rolling, so you can tweak it as needed.
02 - Want a twist? Try adding a tiny bit of peppermint flavor to the melted chocolate for an extra kick.
