My Greek neighbor shared this zesty lemon chicken soup with me, claiming it fixes everything from sniffles to heartbreak. The real wonder happens when beaten eggs and tangy lemon juice turn ordinary chicken soup into something smooth and zingy. It's now my favorite pick-me-up food, particularly when we're craving a bit of sunshine in our dinner.

What Makes This Irresistible

That silky broth hugs the soft chicken and rice while zesty lemon adds pop to every bite. You won't need any cream – those whisked eggs handle all the magic, creating that rich texture. My little ones nicknamed it 'sunshine soup' and even the fussiest little eaters always want more.

Your Shopping List

  • The Base: Quality olive oil, chopped onions, celery, carrots, and homemade chicken stock truly elevates everything.
  • The Stars: Juicy lemons, plump eggs, and fluffy rice – jasmine works wonderfully here.
  • Protein: Pulled chicken, grabbed from a store-bought rotisserie or cooked at home – both turn out fantastic.
  • Fresh Touches: Sprigs of dill and parsley bring brightness and a splash of color.

Let's Cook

Start With Vegetables
Warm up your pot with olive oil, soften those veggies until they're tender and aromatic, roughly 5 minutes.
Build Your Soup
Add the chicken stock, toss in rice, let everything bubble until soft, then mix in your pulled chicken.
The Magic Part
Beat those eggs till they're light and airy, squeeze in fresh lemon juice, then gradually pour in hot broth while continuously whisking to avoid scrambling.
Finish With Care
Pour that egg mixture back into your pot, keep the flame low, sprinkle herbs and adjust your seasonings to taste.

Kitchen Secrets

Don't rush the egg part or you'll end up with chunky egg bits floating around. Keep that whisk moving while adding the hot liquid bit by bit. And remember not to boil the soup after adding eggs or you'll ruin that gorgeous smoothness we're after.

Make It A Meal

Grab some hearty bread to mop up all that tasty broth. I sometimes add a simple green salad on the side with just olive oil and lemon juice to match the soup flavors. A sprinkle of fresh herbs on top makes it look fancy enough for company.

Save Some For Later

The soup stays tasty in your fridge for about 3 days if you keep it covered. I wouldn't put it in the freezer though, the eggs don't thaw well at all. When you warm it up, go slow on low heat and stir often to keep it nice and velvety.

Mix It Up

Swap the rice for orzo pasta when you want something new. I often toss in handfuls of fresh spinach right before serving or bulk it up with extra veggies like zucchini. Want a veggie version? Just use tasty vegetable broth instead and leave out the chicken. It's still incredibly good.

Your Kitchen Your Rules

Sometimes I squeeze in more lemon when we need extra zing. My mom loads hers with dill while I go heavy on black pepper. That's the beauty of home cooking. You take a basic idea and tweak it to match what your family loves. Each pot tells a different story.

Frequently Asked Questions

→ How do I avoid curdling the eggs?
To keep the eggs smooth, mix in hot broth gradually while whisking non-stop. Add a little broth at a time until the eggs warm up before putting it in the soup.
→ Can I swap chicken thighs for breasts?
Sure! While thighs are more flavorful, breasts work too. Just cut the cooking time down to 25-30 minutes since they cook faster.
→ Why is short grain rice preferred?
Short grain rice makes the soup thicker by releasing more starch. Long grain can work, but you’ll miss out on that creamy texture.
→ Can this be prepped in advance?
You can make the base beforehand and finish it with the egg-lemon mix when serving. Just reheat gently so the eggs don’t scramble.
→ What if my soup becomes too thick?
Adjust by stirring in hot water little by little until it’s the right consistency. Remember, it thickens more as it sits, especially when reheated.

Ingredients

01 1 ¼ pounds chicken thighs, bone-in, no skin.
02 Half a white onion, chopped super fine.
03 Two big garlic cloves, minced up nicely.
04 One small stalk celery, diced tiny.
05 Medium carrot, also chopped finely.
06 ¾ tsp cinnamon powder.
07 ¼ tsp turmeric powder.
08 A couple bay leaves.
09 3 ¼ cups of chicken broth.
10 Four cups of hot water, used at different steps.
11 Half a cup of short-grain white rice, rinsed.
12 About 3 ½ oz. of kale, shredded and stems taken out.
13 Three jumbo eggs.
14 1 teaspoon lemon zest, grated finely.
15 6 tbsp fresh lemon juice.
16 2 tbsp chopped fresh dill.
17 Some extra virgin olive oil for finishing.

Instructions

Step 01

Combine chicken, veggies, spices, bay leaves, broth, and 2 cups of water in a big pot. Add seasoning like salt and pepper. Bring it to a boil, then simmer on low with the lid on for 40 minutes.

Step 02

Take out the bay leaves and chicken. Toss in the rice and the water you have left. Cover it up and let it cook for 10 minutes. While that's cooking, shred the chicken into bits.

Step 03

Mix in the shredded chicken and kale. Let it cook gently for another 5 minutes.

Step 04

Beat the eggs with the lemon juice and zest until they get all frothy.

Step 05

Carefully pour hot broth into the egg mixture a little bit at a time while whisking. Then, pour that egg mix back into the pot of soup while whisking again.

Step 06

Warm it on low for about 5 minutes so it thickens. Toss in the dill and adjust the salt or pepper if needed. Drizzle a little olive oil on top before serving.

Notes

  1. Mixing eggs slowly with hot broth avoids them scrambling.
  2. The soup will naturally thicken over time while sitting.
  3. Pour in extra hot water if you'd like it thinner.
