Carefully score an 'X' on top of each tomato with a sharp knife. Pull back the tops slightly but don’t cut all the way through.

Break apart minced beef in a hot pan and cook over medium heat. Once browned, mix in taco seasoning and stir well. Let it cook together for another 2–3 minutes.

Line the inside of each tomato with a layer of lettuce. Make sure it fully covers the bottom.

Scoop the seasoned beef onto the lettuce layer inside each tomato.

Scatter diced onions on top of the meat, followed by plenty of shredded cheese.

Add a spoonful of sour cream on each stuffed tomato. Pair with some taco sauce on the side and enjoy right away.
