Easy Beef Wraps (Print Version)

# Ingredients:

→ Seasoning Mix

01 - 1/4 teaspoon cayenne pepper (optional)
02 - 1/4 teaspoon ground black pepper
03 - 2 teaspoons of both cumin and paprika powders
04 - 1 teaspoon each of onion powder, dried oregano, and salt

→ Meat Filling

05 - 2 garlic cloves, minced
06 - 1/2 onion, chopped finely
07 - 1/2 tablespoon olive oil for cooking
08 - 500g or 1 lb of lean minced beef
09 - 3 tablespoons water
10 - 2 tablespoons tomato paste

→ For Building

11 - 3 tomatoes, diced and de-seeded
12 - 3 cups shredded iceberg lettuce or chopped cabbage
13 - 3 cups cooked white rice (long grain)
14 - Fresh cilantro, finely chopped (optional)
15 - 1 cup black beans, drained
16 - 3/4 to 1 1/2 cups grated cheese that melts well
17 - 6-8 large flour tortillas (10 inches or more)
18 - 1/2 red onion, finely diced
19 - 1 cup of corn kernels

# Instructions:

01 - Cook garlic and onion in hot oil until they smell amazing and look golden. Add the ground beef and cook until it’s browned through. Stir in the spices, tomato paste, and water, then simmer until saucy but not dry. Let it cool for 10 minutes.
02 - Heat up the tortillas if needed—use the package directions if they need it before assembling.
03 - Add a scoop of rice just below the tortilla’s center, followed by beef, lettuce, corn, beans, onion, tomato, cilantro (if used), and cheese.
04 - Fold the bottom of the tortilla over the filling, tuck in both sides, and roll it up snugly. Wrap completely in foil.
05 - You can fry them in foil on a hot pan for a few minutes each side or bake at 180C/350F for about 20 minutes until warmed through and crispy outside.

# Notes:

01 - Swap cabbage for lettuce if planning to freeze them
02 - Feel free to toss in extra veggies into the beef mix
03 - Pairs great with salsa and sour cream on the side
