DIY Condensed Milk (Print Version)

# Ingredients:

01 - 1 teaspoon vanilla extract.
02 - 1/4 teaspoon salt.
03 - 2 cups whole milk.
04 - 1/2-3/4 cup sugar.

# Instructions:

01 - In a medium pot, combine milk, salt, and sugar. Stir constantly over medium-high heat until the sugar's gone.
02 - Turn the heat down for a soft simmer. Gently stir the pot's bottom sometimes but skip the whisking. Let it go for 30-45 minutes.
03 - Once the liquid's reduced by half and darkened like syrup, stir in the vanilla.
04 - If there's foam or bits floating around, strain it. Leave it to cool completely after that.
05 - Pop it into a sealed container, then store it in the fridge for up to a month. Briefly heat it up if it thickens too much.

# Notes:

01 - A smaller pot speeds things up.
02 - Thickens even more once cold.
03 - Skip whisking after sugar's melted in.
