BLT Egg Bites (Print Version)

# Ingredients:

01 - 6 pieces of double-smoked bacon, split in half and trimmed of rind
02 - 12 boiled eggs, shells removed
03 - 3 tbsp mayonnaise
04 - 1 tbsp capers, minced
05 - 1 tbsp fresh chives, chopped
06 - 1 tbsp freshly chopped dill
07 - 2 tsp grainy mustard
08 - 3 leaves of lettuce (iceberg or loose-leaf)
09 - 12 small tomato slices
10 - 12 short toothpicks

→ Optional Garnish

11 - Freshly chopped dill
12 - Everything bagel topping

# Instructions:

01 - Put eggs in a small pan, cover them with cold water, and bring to a boil. Take them off the heat, cover the pot, and wait 9 minutes. Move the eggs to icy water, peel once cool, and set them aside.
02 - Cook the bacon in a pan on medium heat until crispy. Let it drain on a plate lined with paper towels.
03 - Slice eggs lengthwise. Carefully scoop out yolks into a bowl. Combine yolks with mayonnaise, mustard, capers, dill, and chives. Mash it all up evenly, then fill egg whites with this mixture.
04 - Place one piece of cooked bacon on half of the filled eggs (break bacon pieces if needed). Add a lettuce leaf and a tomato slice on top. Cover with the remaining eggs, then secure them with a toothpick.
05 - Right before serving, sprinkle fresh dill and everything bagel seasoning on top.
