Line a baking sheet with parchment and set your oven to 220°C for preheating.

Arrange three dishes: one with plain flour, the second with whisked eggs, and the third with panko, Parmesan, garlic powder, black pepper, and salt mixed together.

Take each spear, coat it first in the flour, shake off the extra, dip it in the egg, and finally cover it in the breadcrumb mix. Press gently so it sticks.

Lay the asparagus spears in one layer across the lined baking sheet.

Give a light spray of cooking oil or drizzle some olive oil on top to help it get crispy.

Put the tray in the oven for 10–12 minutes, until the breading turns golden and the asparagus softens.

Take the tray out and serve the spears right away. Perfect for snacking or alongside a meal.
