In your food processor or blender, toss in cottage cheese, your choice of milk or cream, sweetener like honey or syrup, a bit of vanilla if you'd like, and a small pinch of salt. Blend until the mix is super smooth without any chunks. Check how it tastes and add more sweetener if needed.

Shift the blended mix into a bowl, cover it up, and stick it in the fridge. Chill it for a couple of hours to get it ready for freezing.

Pour the chilled base into your ice cream maker and follow its instructions. Let it churn for about 20–25 minutes until it looks like soft-serve.

No ice cream maker? No problem. Pour the base into a freezer-safe dish and freeze. Stir it every 30 minutes for a few hours so it doesn’t get icy but stays creamy.

Once it's at the texture you like, scoop it into an airtight container and freeze for a couple more hours till it hardens fully.

Serve some scoops of your homemade cottage cheese dessert. Top it with fruits, nuts, or even a little chocolate sauce!
