Winter Chopped Salad (Print Version)

# Ingredients:

→ Dressing

01 - 1/4 teaspoon kosher salt
02 - 1/2 teaspoon honey
03 - 1/4 teaspoon garlic powder
04 - 2 tablespoons balsamic vinegar
05 - 1 1/2 teaspoons Dijon mustard
06 - 1/4 cup extra virgin olive oil
07 - 1/4 teaspoon black pepper

→ Salad

08 - 1/2 cup pomegranate seeds
09 - 1/2 cup feta cheese, crumbled
10 - 2 cups rotisserie chicken, shredded
11 - 6 cups romaine lettuce, chopped
12 - 1/2 cup dried cranberries
13 - 1 medium Honeycrisp apple, diced
14 - 1/2 cup candied pecans, roughly chopped
15 - 1/2 cup red onion, diced

# Instructions:

01 - Stir together the olive oil, balsamic vinegar, mustard, honey, garlic powder, pepper, and a pinch of salt. Leave it aside.
02 - Toss together lettuce, chicken, apple, onion, cranberries, pomegranate seeds, pecans, and crumbled feta in a big bowl.
03 - Pour the dressing on top and gently mix everything just before you dig in.

# Notes:

01 - Toss the dressing on right before serving to keep the salad crisp.
02 - Homemade or store-bought candied pecans both work great.
