Chicken Bread Rolls (Print Version)

# Ingredients:

01 - 4 slices of bread.
02 - 1 cup of pre-cooked chicken, chopped into small bits.
03 - 1 egg, lightly whisked.
04 - 1/2 cup of finely diced onions.
05 - 1/4 cup of chopped bell peppers (choose from red, yellow, or orange).
06 - 2 tablespoons of olive oil.
07 - 1/4 teaspoon of garlic powder.
08 - 1 tablespoon of Dijon mustard.
09 - 1/4 cup of mayonnaise (or substitute with French aioli).
10 - A pinch of salt and some ground black pepper to season.

# Instructions:

01 - Grab the bread and roll it flat with a rolling pin until it's super thin and pliable. Set aside when done.
02 - Combine the chicken, onions, peppers, garlic powder, mayo, mustard, salt, and pepper in a big mixing bowl.
03 - Spoon some of the chicken mixture onto each piece of flattened bread.
04 - Roll the bread tightly over the filling. If needed, secure each roll with a toothpick.
05 - Add olive oil to a big pan and warm it over medium-high heat.
06 - Dip the bread rolls into the beaten egg to coat them, and place them in the pan. Be sure to give each roll its space.
07 - Let each side cook for about 1-2 minutes until the bread turns a lovely golden brown.
08 - Before serving, let the rolls cool for a couple of minutes.

# Notes:

01 - You can prep the filling ahead of time and keep it chilled in the fridge.
02 - Use toothpicks to keep the rolls together when frying.
03 - Feel free to bake these instead! Cook in the oven at 190°C (375°F) for around 15-20 minutes.
04 - Swap mayonnaise with some Greek yogurt if you want a lighter alternative.
05 - Perfect for putting any leftover chicken to good use.
