Gently form the ground beef into three patties the same size as your bread. Keep the shape even but don't squish too hard.

Sprinkle a blend of onion powder, garlic powder, salt, and pepper on both sides of the patties.

Get a big sturdy skillet hot over medium-high heat for about 3-4 minutes until it’s ready to sizzle.

Place patties onto the hot skillet and cook for 4-5 minutes per side for medium. If you like it more or less done, adjust your timing. Move cooked patties to a plate.

Mix all the sauce goodies like mayo, ketchup, sugar, relish, and bacon bits in a little bowl. Give it a good stir until smooth.

Turn the heat on the skillet down to medium. Wipe it clean, then butter one side of each bread slice generously.

Put three buttered bread pieces in the skillet, butter side touching the pan. Lay two slices of provolone on each. Stack a cooked beef patty on top, then layer with two slices of cheddar.

Smear a good amount of the sauce on the bare side of the other bread slices. Put them on the sandwiches, saucy side inside.

Let the sandwiches cook for 3-4 minutes until they turn golden. Carefully flip them over and let the other side cook for 2-3 minutes, until the cheese oozes.

Cut each sandwich into halves diagonally and enjoy while the cheese is still gooey and irresistible!
