Get your oven heating up to 400°F (200°C).

Stir together the softened cream cheese, mozzarella, Parmesan, Italian seasoning, garlic powder, and the optional flakes of red pepper in a bowl. Keep mixing till it’s smooth.

Scoop a little of your cheese mix onto a pepperoni slice, then press another slice on top to sandwich it.

Spread the bites out on a lined baking tray, making sure they aren’t too close together.

Let them bake for 12-15 minutes, or until the pepperoni turns crispy and the cheese is bubbly.

After pulling them out, give them a few minutes to cool off. Sprinkle fresh parsley on top and enjoy with some warm marinara sauce.
