Toss the shredded chicken, mozzarella, softened cream cheese, sour cream, garlic, parsley, paprika, salt, and pepper all together in a big bowl. Stir until everything's mixed up nicely.

Place a tortilla on a clean, flat surface. Scoop a quarter of the chicken filling into the middle, leaving some space around the edges. Sprinkle some mixed greens on top for texture. Fold the edges in, roll it up tight from the bottom, and make sure it holds together.

Warm up a non-stick pan over medium heat. Add a touch of olive oil and place the wraps seam-side down into the pan. Cook for 3-4 minutes until the bottom is golden and crispy, then flip carefully and do the same for the other side.

Take the wraps out of the pan and let them sit for a minute before cutting them in half.
