Set your oven to 425°F. Put parchment paper on a roomy 15x21 baking tray, or prep two smaller ones.

Peel the skin off. If they wobble, slice a thin piece off the bottom so they're steady. Cut into ½-inch circles, then into cubes.

Place cubes on a baking tray. Toss well with your oil, spices, and optional maple syrup.

Lay cubes flat on the tray, with space between them so they don’t stick.

Pop them in the oven and roast for 25-35 minutes at 425°F. Shuffle them around roughly halfway through (about 15 minutes).
