Set the oven to 350°F (180°C) and use silicone baking mats to line your trays. Skip parchment, cookies need to stick a little.

In a big mixing bowl, whip the butter and sugar together for around 3 to 4 minutes on medium speed, until it’s pale and fluffy.

Crack in the egg and mix until smooth. Add the almond and vanilla flavorings and blend again until everything’s mixed in.

Toss in the flour and salt and stir until it just starts coming together. Use a spatula to finish if needed, but don’t overdo it.

If you’re using colors, split the dough into sections. Mix in the gel coloring slowly to get the right shade.

Pop the dough into a cookie press and follow its instructions to shape them. Press cookies straight onto the baking tray—they can be pretty close since they don’t spread.

If you want, sprinkle decorations over the cookies now.

Put the cookies in the oven for about 5–8 minutes. For softer cookies, aim for 5 minutes.

Let the cookies sit on the trays for 4-5 minutes, then transfer to a cooling rack until they’re completely cool.
