Butterscotch Haystacks (Print Version)

# Ingredients:

01 - 1 packet (12-ounce) of fried chow mein noodles.
02 - 3/4 cup of roasted salted peanuts (dry).
03 - 1/4 teaspoon of kosher salt.
04 - Half a cup of smooth peanut butter (like Jif or Skippy).
05 - 1 bag (11-ounce) of butterscotch chips.

# Instructions:

01 - Put parchment or wax paper on two baking trays.
02 - Roughly chop your roasted peanuts into smaller pieces.
03 - Place peanut butter, salt, and butterscotch chips in a big bowl that’s safe for the microwave.
04 - Heat in the microwave for 2 minutes, giving it a stir halfway through.
05 - If it's not melted enough, pop it back in for 20-second intervals until it’s mostly smooth.
06 - Throw in the peanuts and chow mein noodles.
07 - Stir everything so it all comes together nicely.
08 - Scoop about 2 big spoonfuls of the mix onto the prepared trays.
09 - Let them sit for 40 minutes at room temp or pop them in the fridge for 20 minutes, so they can firm up.

# Notes:

01 - Avoid using natural-style peanut butter for this.
02 - You can melt everything in a double boiler if you don't want to use a microwave.
03 - You’ll end up with about 36 haystacks.
04 - Store them in a container with a good seal to keep them fresh.
05 - They can stay in the freezer for up to 3 months.
06 - Perfect for family get-togethers or festive occasions.
