Banana Pudding Brownies (Print Version)

# Ingredients:

→ Pudding

01 - 1 large egg yolk
02 - 2 tablespoons granulated sugar
03 - 1 tablespoon unsalted butter
04 - 1/2 cup whole milk
05 - 2 tablespoons all-purpose flour
06 - 1 tablespoon vanilla extract

→ Banana Batter

07 - 1 cup vanilla wafer cookies, plus extras for the top
08 - 1/4 quarter teaspoon baking powder
09 - 6 tablespoons unsalted butter, melted
10 - 1 teaspoon vanilla extract
11 - 1/2 cup light or dark brown sugar, packed
12 - 1/4 cup granulated sugar
13 - 1 large egg yolk
14 - 1/2 teaspoon fine sea salt
15 - 1 cup all-purpose flour
16 - 1/2 cup overripe mashed banana

# Instructions:

01 - Heat oven to 350°F. Use parchment paper to line an 8x8 pan.
02 - Mix milk, sugar, flour, and egg yolk on low-medium heat. Stir often until it thickens, about 5-8 minutes. Stir in vanilla and butter.
03 - Combine melted butter and sugars in a bowl. Stir in egg yolk, banana, and vanilla. Gently mix in salt, baking powder, and flour just until blended.
04 - Cover the pan base with half the batter, then add a layer of wafers. Drop pudding and the remaining batter alternately, then swirl gently. Add extra wafers on top.
05 - Bake for about 30-35 minutes, or until a toothpick comes out clean. Let it cool all the way before slicing.
