If your cheese isn't shredded, shred it now. Chop up the onion and pepper into pieces.

Cook onion and pepper in half a tablespoon of butter until soft. Add some salt and pepper for flavor. Move them to a bowl when done.

Cut the ham into small cubes. Brown it in a skillet using the other half-tablespoon of butter. Shift it to another bowl after cooking.

Beat the eggs, then cook them in the rest of the butter over medium heat. Keep them soft and a little moist—don't overcook. Add some salt and pepper.

On each tortilla, layer eggs, veggies, cheese, and ham. Fold up from the bottom, tuck in the sides, and roll it up tightly.

Wrap every burrito in some parchment paper, write a label on it, and pop it into freezer bags to save.
