Zucchini Spinach Boats

# Ingredients:

Cooking spray

Seasonings of your choice

½ cup ricotta cheese (low fat)

1 teaspoon finely chopped garlic

2 medium-sized zucchini

½ cup mushrooms, thinly sliced

2 cups fresh spinach or ¼ cup frozen spinach
# Instructions:

Slice the zucchini in half lengthwise and take out the seeds from the middle.

Use cooking spray on your pan. Cook the mushrooms first, then toss in garlic and spinach. Let it soften for a couple more minutes.

Turn off the heat and mix in the ricotta cheese. Stir until it’s evenly combined.

Fill the zucchini halves with the spinach-mushroom mix. Pop them in the oven at 350°F for about 6 to 8 minutes.
