Zucchini Spinach Boats (Print Version)

# Ingredients:

→ Main

01 - Cooking spray
02 - Seasonings of your choice
03 - ½ cup ricotta cheese (low fat)
04 - 1 teaspoon finely chopped garlic
05 - 2 medium-sized zucchini
06 - ½ cup mushrooms, thinly sliced
07 - 2 cups fresh spinach or ¼ cup frozen spinach

# Instructions:

01 - Slice the zucchini in half lengthwise and take out the seeds from the middle.
02 - Use cooking spray on your pan. Cook the mushrooms first, then toss in garlic and spinach. Let it soften for a couple more minutes.
03 - Turn off the heat and mix in the ricotta cheese. Stir until it’s evenly combined.
04 - Fill the zucchini halves with the spinach-mushroom mix. Pop them in the oven at 350°F for about 6 to 8 minutes.
