White Bolognese Sauce (Print Version)

# Ingredients:

01 - Olive oil
02 - Pinch of nutmeg
03 - Grated Parmesan cheese
04 - Milk or heavy cream
05 - Salt, adjusted to your taste
06 - Mix of ground pork, veal, or beef
07 - Chopped celery
08 - Minced garlic
09 - Pepper, seasoned to your liking
10 - Diced or grated carrot
11 - Finely chopped onion
12 - Dry white wine

# Instructions:

01 - Warm some olive oil in a big pan on medium heat. Toss in the carrot, celery, and onion. Cook and stir them until they soften and smell amazing, which takes about 5-7 minutes.
02 - Add your choice of ground meat to the pan. Stir and break it into bits while cooking, making sure it’s browned and there’s no pink left.
03 - Pour the white wine into the pan. Stir around to scrape up any stuck bits from the bottom. Let it cook until the wine almost disappears, roughly 3-5 minutes.
04 - Add the cream or milk, then simmer the mixture gently. Sprinkle in nutmeg and season it with as much salt and pepper as you like. Let it cook for 30-45 minutes on low heat, stirring every now and then to keep it creamy.
05 - When the sauce is nice and thick, grate some fresh Parmesan into the pan. Stir until it melts and combines smoothly.
06 - Put the hot sauce on top of your favorite pasta and enjoy the creamy, rich taste.

# Notes:

01 - Using low heat to simmer gives the sauce time to get rich and flavorful.
02 - Switch up the recipe by trying ground chicken or turkey, or swap to non-dairy milk for a vegan option.
03 - Make extra and freeze—it’s great for quick meals later on.
04 - Grating fresh Parmesan makes a big difference. It melts better too!
