Toss the chunks of watermelon into a blender or food processor and whizz until it’s fully liquid. Use a fine strainer to remove any pulp or pieces, leaving just the juice. Pour the juice into a shaker filled with ice.

Add the lime juice (2 tablespoons) and agave syrup into the shaker, then close and shake until it’s cold and well blended.

Pour some lime juice onto one small plate. On another, mix the coarse salt with the Tajin. Take the rim of a rocks glass, dip it in the lime juice, then press it into the salt and Tajin mix to coat.

Fill your glass with ice. Pour the watermelon mix on top. Pop a lime slice and a small piece of watermelon on the edge for a fun garnish.
