Watermelon Margarita (Print Version)

# Ingredients:

01 - A cup and a half of diced watermelon, plus a tiny slice for decoration
02 - Some ice cubes
03 - 2 tablespoons of fresh lime juice, and extra for rimming the glass
04 - 2 tablespoons of agave syrup
05 - One tablespoon of coarse salt
06 - Half a teaspoon of Tajin spice
07 - Lime slice to decorate

# Instructions:

01 - Toss the chunks of watermelon into a blender or food processor and whizz until it’s fully liquid. Use a fine strainer to remove any pulp or pieces, leaving just the juice. Pour the juice into a shaker filled with ice.
02 - Add the lime juice (2 tablespoons) and agave syrup into the shaker, then close and shake until it’s cold and well blended.
03 - Pour some lime juice onto one small plate. On another, mix the coarse salt with the Tajin. Take the rim of a rocks glass, dip it in the lime juice, then press it into the salt and Tajin mix to coat.
04 - Fill your glass with ice. Pour the watermelon mix on top. Pop a lime slice and a small piece of watermelon on the edge for a fun garnish.

# Notes:

01 - For an extra-smooth drink, make sure the watermelon juice is strained thoroughly.
