Vegan Banana Loaf (Print Version)

# Ingredients:

→ Base

01 - 4 small or 3 big bananas, super ripe (about 1½-1¾ cups)
02 - 1¾ cups (210g) spelt flour
03 - ⅓ cup (75g) organic cane sugar
04 - 1 teaspoon baking soda
05 - 1 teaspoon baking powder
06 - 1 pinch of salt
07 - ⅓ cup (75ml) mild oil
08 - 1 teaspoon vanilla essence
09 - ¼ cup (56ml) almond milk, if it feels too thick

→ Optional Add-ins

10 - 1 teaspoon ground cinnamon
11 - ½-⅔ cup chopped nuts (like walnuts)
12 - ¼-½ cup chocolate chips

# Instructions:

01 - Heat up your oven to 350°F and grease your loaf pan.
02 - In a medium-sized bowl, mash your bananas. Stir in the oil and vanilla. Add in the flour, sugar, salt, baking powder, and baking soda. Don’t overmix. Use almond milk if the batter feels too dry.
03 - Spoon the batter into the pan you greased earlier. Bake it for 50-60 minutes or until a toothpick poked in comes out clean.
04 - Let it rest for 10 minutes, then slice it up.

# Notes:

01 - Want a lighter option? Use applesauce instead of oil.
02 - Dates can replace sugar for sweetness.
03 - Works well with different types of flour.
