Valentines Chocolate Lava Cakes (Print Version)

# Ingredients:

→ Base Layer

01 - 6 oz (170g) top-notch semi-sweet chocolate
02 - 1/2 cup (113g) butter, unsalted
03 - 1/4 cup (31g) plain flour
04 - 1/2 cup (60g) powdered sugar
05 - A pinch of salt (1/8 tsp)
06 - 2 eggs, large
07 - 2 extra egg yolks

08 - Chocolate sauce
09 - Ice cream
10 - Fresh fruits or berries

# Instructions:

01 - Coat four 6-ounce ramekins with cooking spray, then dust the insides with cocoa powder. Warm your oven up to 425°F.
02 - Heat butter and chopped chocolate in the microwave, stirring every 10 seconds, till it's silky smooth.
03 - Mix flour, sugar, and salt in one bowl. In a separate bowl, whisk together eggs and yolks. Blend everything with the melted chocolate until it’s nice and smooth.
04 - Scoop the batter evenly into your ramekins. Pop them in the oven for 12 to 14 minutes, until the edges are set while the tops stay soft.
05 - Let the ramekins cool briefly for 1 minute. Flip them onto plates and top with your favorite extras. Dig in right away!

# Notes:

01 - Use premium chocolate—not chips.
02 - Muffin pans work too (bake 8-10 minutes).
03 - You can prepare the batter up to 2 days ahead.
04 - Best served as soon as it's made.
