Valentines Cheesecake Pie (Print Version)

# Ingredients:

→ Cheesecake Filling

01 - 452g (16 oz) cream cheese, softened
02 - 100g (1/2 cup) white sugar
03 - 60g (1/4 cup) sour cream, full-fat, room temp
04 - 1 tsp pure vanilla
05 - 1 tsp fresh lemon juice
06 - 2 large eggs at room temp

→ Graham Cracker Crust

07 - 180g (1.5 cups) graham cracker crumbs (12 sheets)
08 - 50g (1/4 cup) sugar
09 - 85g (6 tbsp) melted unsalted butter

→ Extras for Topping

10 - Raspberry sauce for desserts
11 - Raspberries, fresh
12 - Whipped cream

# Instructions:

01 - Blend sugar and cream cheese until it's smooth. Toss in sour cream, vanilla, and lemon juice. Add eggs one at a time, mixing gently.
02 - Set oven to 350°F. Combine crumbs, sugar, and melted butter. Gently press them into a 9-inch pie pan.
03 - Place crust in the oven for 10 minutes while you whip up the filling.
04 - Drop oven temp to 325°F. Pour your silky filling into the warm crust, and bake for about 35 minutes. Tent it to prevent over-browning if required.
05 - Let it sit at room temp for 1 hour. Pop it in the fridge for a minimum of 2 hours before digging in.
06 - Pile on your favorite toppings to finish. Keep cold until you're ready to enjoy.

01 - Let all items come to room temp before starting.
02 - You'll be fine making this up to 2 days ahead.
03 - It freezes great for up to 3 months.
04 - Don't worry, the first slice can be tricky.
