Ultimate Banana Cake (Print Version)

# Ingredients:

01 - 1 cup white sugar.
02 - 2 large bananas, mashed up.
03 - 2 eggs.
04 - 1/2 teaspoon vanilla essence.
05 - 1/4 cup apple puree (unsweetened).
06 - 1/4 cup light oil (like sunflower or similar).
07 - 1 1/2 cups plain flour.
08 - 1/4 teaspoon baking powder.
09 - 1/2 teaspoon baking soda.
10 - 1/2 teaspoon table salt.
11 - 1/8 teaspoon ground nutmeg.
12 - 1/4 teaspoon cinnamon.
13 - 1/4 cup softened butter.
14 - 1/2 teaspoon vanilla extract.
15 - 1 cup powdered sugar (icing sugar).
16 - 1 tablespoon full-fat cream.
17 - 1/4 cup crushed walnuts (optional).

# Instructions:

01 - Set your oven to 325°F (around 160°C). Coat an 8x8 square dish with non-stick spray, then leave it on the counter.
02 - Grab a big mixing bowl. Toss in the flour, the baking soda, baking powder, salt, nutmeg, and cinnamon. Give it all a stir and leave it aside.
03 - In a different bowl, use a hand or stand mixer to blend sugar, oil, and applesauce. Add eggs, mashed bananas, and vanilla and mix until everything's barely together.
04 - Pour the dry mix slowly into the wet mixture. Stir gently, don’t overdo it. Pour this batter into your prepared dish, then bake for 25–30 minutes. You'll know it's done when a toothpick comes out clean. Let it cool down completely.
05 - In a little pan over medium heat, melt the butter. Once it’s melted, move it into another container as fast as you can. Cool it to room temp.
06 - In a small bowl, use your mixer again to beat the cooled butter, vanilla, icing sugar, and full cream. Keep going until it’s smooth and dreamy.
07 - Once the cake is cool, spread your frosting evenly over it. Sprinkle crushed walnuts on top if you like. Cut the cake into squares and enjoy!
