Tuna Wrap Cheese Melt (Print Version)

# Ingredients:

→ Wrap Base

01 - 1 tablespoon lemon juice (about half a lemon)
02 - 1/4 teaspoon black pepper
03 - 1/4 cup corn kernels
04 - 1/2 teaspoon garlic powder
05 - 1/4 cup finely chopped red onion
06 - 2 tablespoons plain Greek yogurt
07 - 1 tablespoon dill relish or capers
08 - 1 can (5 oz) tuna, drained (yellowfin or skipjack)
09 - 1/2 tablespoon Dijon mustard

→ Assembly

10 - 1/4 cup mozzarella, freshly shredded
11 - 1 burrito wrap (10-inch or larger)
12 - A splash of olive oil for cooking

# Instructions:

01 - In a bowl, stir together the tuna, yogurt, mustard, lemon juice, corn, onion, relish, garlic powder, and pepper until it’s well mixed.
02 - Briefly warm your tortilla. Spread the cheese and tuna mixture evenly, leaving a bit of space along the edges.
03 - Fold the sides inward, then tuck the bottom edge up. Roll it snugly away from you so it stays packed.
04 - Heat up a skillet with some olive oil. Grill each side of the wrap for 3-4 minutes until it’s a nice golden color and the cheese gets melty.
