Stir together the crushed biscuits, mascarpone, sugar, espresso powder, and vanilla until the mixture looks smooth.

Scoop out a tablespoon of the mixture, roll into small balls, and chill for half an hour.

Heat up the chocolate in the microwave for a few seconds at a time, giving it a stir between bursts.

Either dunk the balls in the melted chocolate or roll them around in the cocoa powder.

Sprinkle on some cocoa powder and pop them in the fridge for 15 minutes to firm up.
