Tiramisu Truffles (Print Version)

# Ingredients:

01 - 1/2 cup cocoa powder.
02 - 1/4 teaspoon vanilla extract.
03 - 1/4 cup powdered sugar.
04 - 8 oz mascarpone cheese.
05 - 1 tablespoon espresso powder.
06 - 1 1/2 cups crushed ladyfingers cookies.
07 - 1/2 cup chocolate chips.

# Instructions:

01 - Stir together the crushed biscuits, mascarpone, sugar, espresso powder, and vanilla until the mixture looks smooth.
02 - Scoop out a tablespoon of the mixture, roll into small balls, and chill for half an hour.
03 - Heat up the chocolate in the microwave for a few seconds at a time, giving it a stir between bursts.
04 - Either dunk the balls in the melted chocolate or roll them around in the cocoa powder.
05 - Sprinkle on some cocoa powder and pop them in the fridge for 15 minutes to firm up.

# Notes:

01 - Put in the fridge if too soft.
02 - Lasts up to a week when refrigerated.
03 - Vanilla wafers are a great alternative.
