Sprinkle salt and pepper on both sides of the tilapia.

Warm up olive oil and 1 tbsp butter in a big pan on medium heat. Fry the tilapia, flipping after 3-4 minutes per side until both sides are golden and cooked through. Take them out and set aside.

Use the same skillet, drop in the last tbsp of butter and toss in the garlic. Cook for a minute or two until it smells amazing.

Add roasted red peppers to the skillet and let them cook for 2 minutes with the garlic. Dump it all into a blender and blend till smooth.

Pour the blended mix back into the pan, stir in the cream, smoked paprika, and optional chili flakes. Let it bubble gently for about 3-5 minutes till it's nice and thick.

Pop the fried tilapia back into the sauce. Spoon some of that good pepper sauce over the fish to coat all over.

Top everything with fresh parsley and dig in while it's hot.
