Sweet Chilli Beef Bowls (Print Version)

# Ingredients:

→ Main ingredients

01 - 500 g ground beef (beef mince)
02 - 1 tbsp plain cooking oil, like canola or similar
03 - 1 small onion, chopped into tiny bits
04 - 2 minced garlic cloves
05 - 3 tbsp chopped cilantro (or use green onion as an alternative)
06 - 1/3 cup unsalted roasted cashews (or peanuts)

→ Sweet chili stir fry sauce

07 - 2 tbsp rice vinegar (swap with cider vinegar if needed)
08 - 1 tbsp oyster sauce
09 - 2 tbsp sweet chili sauce (like Trident)
10 - 2 tbsp fish sauce
11 - 1 tbsp dark soy sauce

→ Sweet chili drizzle sauce

12 - 3 tbsp sweet chili sauce
13 - 1 minced garlic clove (use a garlic crusher for ease)
14 - 2 tsp fish sauce
15 - 2 tbsp lime juice (use rice vinegar if limes are costly)

→ For serving

16 - 2 servings of jasmine rice (or any plain rice you like)
17 - Steamed veggies or fresh ones like cucumber, red onion slices, or cilantro

# Instructions:

01 - Combine drizzle sauce ingredients in a bowl. Leave it aside until serving.
02 - Stir up all stir fry sauce ingredients in a bowl. Leave this aside too for now.
03 - Warm up a large pan over medium-high heat, toss in the cashews, and toast them for about 2 minutes. Let them cool, then chop up roughly on a board.
04 - Add oil to the hot pan and throw in the garlic and onion. Cook for a minute, then add the ground beef. Break it apart as it cooks and wait for it to lose all pink color.
05 - Pour the stir fry sauce into the beef mixture. Stir and keep it cooking until the sauce thickens and coats the beef completely, about 3 to 4 minutes. Don’t skip this step—it’s crucial for flavor!
06 - Dish up the beef over warm rice. Add some steamed or fresh veggies on the side, drizzle on the sweet chili sauce, and scatter the chopped nuts and cilantro on top. Want more spice? Add fresh chili. Mix it all together and dig in!
