Turn the oven on to 375°F (190°C). Lightly coat a 9x13 dish with non-stick spray so nothing sticks.

In the dish you just sprayed, layer the tater tots, the diced ham, 1 cup of the shredded cheddar, and all the mozzarella. Use your hands to gently toss it into an even layer.

Use a big bowl to whisk the eggs, milk, sour cream, and all the seasonings, including hot sauce if you want a kick. Make sure it’s smooth and well-blended.

Slowly pour the egg mixture over the ham and tater tot layer in your dish. Try to spread it evenly.

Cook in the oven for about 45 minutes, or until the top has a golden look and the mixture is set.

Take it out of the oven and sprinkle the remaining half cup of cheddar cheese over the hot casserole. Put it back in the oven for 5 more minutes, just until the cheese melts.
