Keto Jalapeno Bites (Print Version)

# Ingredients:

01 - 2 cups pork rinds, crushed into fine crumbs
02 - 8 oz cream cheese, softened
03 - 2 large eggs
04 - 3 jalapeños, chopped finely
05 - 1 tablespoon heavy cream
06 - 1/4 cup bacon bits
07 - 1/4 teaspoon onion powder
08 - 2 cups shredded Monterey Jack cheese
09 - 1/4 teaspoon garlic powder

# Instructions:

01 - Grab a big mixing bowl and toss in the cream cheese, shredded Monterey Jack, bacon pieces, chopped jalapeños, garlic powder, onion powder, salt, and pepper. Stir super well until the mixture's smooth and blended.
02 - Turn your Air Fryer to 400°F to preheat for cooking. In one dish, mix up the eggs and heavy cream until smooth. In a second bowl, spread out the crushed pork rinds for easy dipping.
03 - Scoop small blobs of the cheese mixture with a spoon or scoop. Roll them into little balls with your hands, then dip them in the egg wash. Roll each coated ball in the pork rinds and set on a tray lined with parchment paper.
04 - Spray the air fryer basket lightly with oil spray. Arrange the coated balls inside, but keep them separate so they don't stick. Spray the tops lightly, then cook for 12 minutes at 400°F until they're golden and crispy.
05 - Let the cooked bites sit in the basket for a bit to cool off. Remove carefully and serve while they're still warm.

# Notes:

01 - Wear gloves when working with jalapeños to avoid skin irritation.
02 - For less heat, take out the seeds and white parts inside the jalapeños.
03 - Store any extra bites in a sealed container in the fridge. They’ll stay good for about 4 days.
04 - To warm up leftovers, pop them in an oven or air fryer so they stay crispy.
