Set your oven to 400° F. Rinse the potatoes under water and dab them dry. Poke some holes with a fork and wrap them snugly in foil. Stick them in the oven for an hour. Let them cool off a bit after pulling them out.

Heat a large pan over medium-high heat. Brown the beef, breaking it apart as it cooks. If there's grease, drain it. Stir in the taco mix and the water it asks for, bring it to a boil, then lower the heat to let it simmer for 10 minutes.

Peel off the foil from the potatoes and cut a slit along the middle to split them open. Scoop the taco meat inside, then load up with toppings you like best. Dig in and enjoy!
