Sweet Plantain Bake (Print Version)

# Ingredients:

→ Base

01 - 1 teaspoon black pepper, split
02 - 1 teaspoon sea salt, split
03 - 3 large eggs
04 - 2 tablespoons olive oil plus 1 teaspoon, separated

→ Vegetables

05 - 1/2 cup baby spinach
06 - 2 Roma tomatoes, diced small
07 - 3 scallions, sliced thin
08 - 1/2 bell pepper (red, yellow, or green), diced finely

→ Toppings

09 - 1 tablespoon rosemary, chopped fresh
10 - Red chile flakes for sprinkling
11 - 2 small ripe plantains (yellow), cut into 1cm thick rounds

# Instructions:

01 - Set your oven to 400°F.
02 - Beat the eggs until bubbly and smoothly mixed.
03 - With 2 tablespoons of olive oil, cook the bell pepper, scallions, and tomatoes until vibrant. Toss in spinach until it softens, then season with half of the pepper and salt.
04 - Pour eggs over the veggie mix. Arrange the plantain slices in a spiral or circle. Sprinkle on the rosemary, and drizzle with the rest of the oil and seasonings.
05 - Pop it in the oven for 15 minutes or until it puffs up and the plantains turn crispy and golden.

03 - Plantains should have a yellow peel when used
