Set your oven to 400°F (200°C). Get a mini muffin tin greased or silicone molds ready.

Mix the cornmeal, plain flour, sugar, salt, and baking powder in a big bowl.

In a smaller bowl, whisk the buttermilk, veggie oil, and egg until smooth.

Slowly add the wet mix into the dry mix. Stir just enough to combine everything.

Pour the batter into muffin tins, filling each about ¾ full. Cook for 10-12 minutes. They’re ready when golden and a toothpick comes out clean.

In a small bowl, whisk together the warm butter, honey, and salt.

With the muffins still warm, brush on that honey butter glaze. Taste best while warm!
