Sweet Mini Butter Poppers (Print Version)

# Ingredients:

→ Poppers

01 - 1 large egg
02 - ¼ cup (60ml) vegetable oil
03 - 1 cup (240ml) buttermilk
04 - ½ teaspoon salt
05 - 1 tablespoon baking powder
06 - ¼ cup (50g) white sugar
07 - 1 cup (125g) plain flour
08 - 1 cup (120g) cornmeal

→ Honey Butter Glaze

09 - ¼ teaspoon salt
10 - 2 tablespoons honey
11 - ¼ cup (60g) melted butter

# Instructions:

01 - Set your oven to 400°F (200°C). Get a mini muffin tin greased or silicone molds ready.
02 - Mix the cornmeal, plain flour, sugar, salt, and baking powder in a big bowl.
03 - In a smaller bowl, whisk the buttermilk, veggie oil, and egg until smooth.
04 - Slowly add the wet mix into the dry mix. Stir just enough to combine everything.
05 - Pour the batter into muffin tins, filling each about ¾ full. Cook for 10-12 minutes. They’re ready when golden and a toothpick comes out clean.
06 - In a small bowl, whisk together the warm butter, honey, and salt.
07 - With the muffins still warm, brush on that honey butter glaze. Taste best while warm!

# Notes:

01 - Tastes amazing fresh out of the oven.
02 - Silicone molds are great if you’re out of muffin tins.
03 - This makes around 24 mini poppers.
04 - Customize them with cheese, jalapeños, or corn kernels.
