Sweet Cinnamon Banana Loaf (Print Version)

# Ingredients:

→ Bread

01 - 6 very ripe bananas, mashed roughly
02 - 2 cups (250g) plain flour
03 - 2 large eggs
04 - 1 tablespoon ground cinnamon
05 - ½ cup (100g) white sugar
06 - 1 teaspoon baking soda
07 - 2 teaspoons baking powder
08 - ⅓ cup (75g) softened unsalted butter
09 - ¼ cup (61g) milk
10 - ½ teaspoon fine salt

→ Topping

11 - 1 teaspoon ground cinnamon
12 - 2 tablespoons sugar

# Instructions:

01 - Turn on your oven to 350°F. Get a 9-inch pan ready.
02 - In a big bowl, mix sugar, butter, and milk. Stir in the eggs, then toss in your mashed bananas.
03 - In a separate bowl, blend together the cinnamon, baking soda, baking powder, salt, and flour.
04 - Gently fold the dry mix into the wet mix until it's just barely blended.
05 - Pour the batter into the loaf pan. Combine the cinnamon and sugar for the topping, then sprinkle it over the batter. Bake for about 60 minutes, and check with a toothpick—it should come out with some crumbs but not wet batter.
