Chili Salmon Delight (Print Version)

# Ingredients:

01 - 1 lime, sliced into wedges.
02 - 2-3 sprigs mint, fresh.
03 - 2-3 sprigs cilantro, fresh.
04 - 1/8 teaspoon black pepper.
05 - 1/2 teaspoon kosher salt.
06 - 1 bunch green onions, sliced thin.
07 - 2 tablespoons freshly squeezed lime juice.
08 - 1 teaspoon Sriracha hot sauce.
09 - 1 tablespoon gingery mince, fresh.
10 - 2 teaspoons soy sauce.
11 - 1/2 cup sweet Thai chili sauce.
12 - 1 tablespoon olive oil.
13 - 1 tablespoon lime juice for tossing greens.
14 - 1 1/2 pounds salmon fillet, center cut.
15 - 2-3 handfuls mixed baby salad greens.

# Instructions:

01 - Combine the chili sauce, soy sauce, Sriracha, lime juice, grated ginger, and half of the green onions in a bowl.
02 - Pull out any small bones, sprinkle some salt and pepper, pour 1/3 cup of the glaze under the salmon, then spread the rest on top before placing it in a baking dish.
03 - Bake slowly at 275°F for about 18-23 minutes until the salmon's center is 130°F.
04 - Mix up the greens with olive oil, a bit of salt, pepper, and lime juice for a bright flavor.
05 - Lay the cooked salmon over the salad. Sprinkle the fresh herbs, leftover scallions, and lime wedges on top.

01 - You can prep this up to two hours ahead.
02 - Use the thick part of the salmon for the best results.
03 - It keeps cooking after you take it out of the oven.
