Set the oven to 400°F. Cover a baking tray with parchment paper or a silicone mat.

Stir together the egg and water in a little bowl. Leave it aside.

Use a food processor or mixer to blend the almond paste, sugar, and vanilla until it’s smooth.

Lay the pastry flat on the baking tray and use a rolling pin to gently make it bigger and thinner.

Cut slits along both long edges of the pastry about 1 inch apart, but leave the center open for the almond filling. Place the filling down the middle.

Fold the strips diagonally over the filling, switching sides as you go. Brush the pastry with the egg wash and sprinkle the almonds on top.

Pop it in the oven for 10 minutes, then reduce the heat to 375°F and bake for another 17–20 minutes until golden brown. Let it cool for 10 minutes on the tray before cutting and enjoying.
