Sweet Almond Pastry (Print Version)

# Ingredients:

01 - 1 sheet puff pastry
02 - 1 large egg
03 - 1 tablespoon water
04 - ¼ cup sliced almonds
05 - 2 teaspoons vanilla extract
06 - ¼ cup granulated sugar
07 - 8 oz almond paste

# Instructions:

01 - Set the oven to 400°F. Cover a baking tray with parchment paper or a silicone mat.
02 - Stir together the egg and water in a little bowl. Leave it aside.
03 - Use a food processor or mixer to blend the almond paste, sugar, and vanilla until it’s smooth.
04 - Lay the pastry flat on the baking tray and use a rolling pin to gently make it bigger and thinner.
05 - Cut slits along both long edges of the pastry about 1 inch apart, but leave the center open for the almond filling. Place the filling down the middle.
06 - Fold the strips diagonally over the filling, switching sides as you go. Brush the pastry with the egg wash and sprinkle the almonds on top.
07 - Pop it in the oven for 10 minutes, then reduce the heat to 375°F and bake for another 17–20 minutes until golden brown. Let it cool for 10 minutes on the tray before cutting and enjoying.

# Notes:

01 - Leave puff pastry in the fridge overnight to thaw, or let it sit on the counter until it’s soft enough to handle.
02 - Almond paste gives the best flavor, so don’t skip or skimp on it!
03 - For a fun twist, spread some Nutella over the filling before wrapping.
