Dump the strawberries, water, and sugar into a saucepan and cook over medium heat. Stir every now and then until the sugar melts and the strawberries soften—about 10 minutes.

Pour the mixture through a fine sieve to separate the liquid. Toss out the strawberry chunks and pop the syrup in the fridge to cool.

In a big pitcher, stir together the cold strawberry syrup, white wine, and soda water until they're well blended.

Gently stir in your orange slices, strawberry pieces, and some mint leaves. Spread them out so it looks pretty.

Stick the sangria in the fridge for at least an hour so the flavors get a chance to blend together.

Toss ice into glasses, pour in the sangria, and make sure each glass gets a bit of fruit before serving.
