Strawberry Sugar Cookies (Print Version)

# Ingredients:

01 - 2 large eggs, at room temperature.
02 - 1 cup of unsalted butter, brought to room temperature.
03 - 3 cups of plain flour.
04 - 2 teaspoons of cream of tartar.
05 - 2 tablespoons of cornstarch.
06 - 1/2 teaspoon of salt.
07 - 2 teaspoons of baking powder.
08 - 1 teaspoon of baking soda.
09 - 1 1/2 cups of white sugar.
10 - 1 teaspoon of strawberry extract.
11 - 1 teaspoon of vanilla extract.
12 - A tiny bit (1/2 teaspoon) of red-colored gel.
13 - 6 tablespoons of powdered freeze-dried strawberries.
14 - Coating: 1/2 cup of glittery sugar.
15 - Coating: 1 tablespoon of powdered freeze-dried strawberries.

# Instructions:

01 - Crush freeze-dried strawberries into fine powder using a blender.
02 - Mix the glittery sugar with the powdered strawberries to make the coating blend.
03 - Beat white sugar and butter together for 3 minutes until fluffy.
04 - Stir in the eggs, strawberry and vanilla extracts, and red coloring gel into the mix.
05 - In a different bowl, mix your dry ingredients: flour, cornstarch, baking soda, baking powder, salt, and cream of tartar.
06 - Gently combine the wet and dry ingredients without overmixing.
07 - Pop the dough into the fridge for 2 hours or longer to chill.
08 - Scoop up dough, roll into little balls, and cover thoroughly with the prepared strawberry coating.
09 - Bake your cookies in a preheated oven at 175°C (350°F) for 10 minutes, just until the edges firm up.

01 - Avoid overmixing the dough.
02 - Let the dough chill in the fridge—mandatory!
03 - Feel free to swap for other freeze-dried fruits.
04 - They freeze wonderfully for later.
