Lime Coconut Bars (Print Version)

# Ingredients:

01 - ⅓ cup white chocolate chips, preferably the mini types
02 - ½ cup shredded coconut, with a bit extra for sprinkling on top
03 - ¼ teaspoon salt
04 - ½ teaspoon baking powder
05 - 1 ¼ cups flour
06 - ¼ teaspoon coconut extract
07 - 1 teaspoon vanilla extract
08 - 1 egg, brought to room temp
09 - ⅔ cup packed brown sugar
10 - ½ cup softened butter (unsalted or salted)

→ Lime Frosting

11 - Food coloring (optional)
12 - 2 tablespoons white chocolate, melted for drizzling
13 - 2 tablespoons lime juice
14 - 1 tablespoon milk or heavy cream
15 - 1 ½ cups powdered sugar
16 - ½ teaspoon lime extract
17 - ½ cup softened butter

# Instructions:

01 - Heat your oven to 350°F (175°C). Line an 8x8 pan with parchment paper, then set it aside.
02 - Beat the brown sugar and butter until smooth and fluffy. Throw in the coconut extract, vanilla, and egg while mixing until blended.
03 - Stir together the flour, shredded coconut, salt, and baking powder until it just comes together. Gently fold in the white chocolate chips.
04 - Smooth the batter into your prepped pan. Toss it into the oven for 15-16 minutes, then cool it completely before decorating.
05 - In a big mixing bowl, beat the butter, milk, powdered sugar, lime juice, and lime extract until light and fluffy.
06 - Stir in a tiny bit of food coloring to get a lime-green look, or mix yellow and green for a custom shade.
07 - Spread the lime frosting all over the bars once they've cooled. Drizzle the melted white chocolate on top using any bag or spoon you like.
08 - Sprinkle more shredded coconut if you'd like. Cut into pieces and dig in—chill them if you want them firmer!
